Chicken Biryani Recipe:
- Marinate the Chicken: Mix chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, red chili powder, salt, and lemon juice. Marinate for 1 hour.
- Prepare the Rice: Wash basmati rice and boil it until 70% cooked with salt, bay leaf, cardamom, and a little oil. Drain the water.
- Cook the Masala: Heat oil + ghee, fry onions until golden, add tomatoes, chilies, spices, and then cook the marinated chicken until tender.
- Layering: Add a layer of chicken masala, then rice. Add saffron milk, fried onions, mint, coriander, and ghee on top.
- Dum Cooking: Seal the pot and cook on low flame for 15-20 minutes. Serve hot.
